Introduction
A delicious recipe I found on here years ago that I have modified to meet a grain-free/dairy-free diet. A delicious recipe I found on here years ago that I have modified to meet a grain-free/dairy-free diet.Number of Servings: 10
Ingredients

1 pound of boneless skinless chicken breasts (frozen)
1 jar of Muir Glen mild organic salsa (16oz)
1.5 TBSP of taco seasoning
.5 cup of organic canned coconut milk*
Directions
Place frozen chicken breasts in the slow cooker. Cover with taco seasoning (best to make your own, less sodium) and whole jar of salsa. Cook on low for 6-8 hours. About 30 minutes before serving, stir in 1/2 cup of coconut milk (use canned, not the kind in the milk carton) the chicken will shred while stirring.
Serve on a bed of cauliflower rice, in lettuce taco shells or eat with a fork! The nutrition calculations are only for the chicken, not for any toppings or extras.
*You can find canned coconut milk with the Asian Foods in your grocery store. Whisk the contents well in a bowl before adding to the chicken.

Wow! This was sooo easy and so good! I wasn't sure about it at first just because there are so few ingredients. I added 4 frozen chicken breasts, a little granulated garlic, the taco seasoning and some salsa from the fridge...then added the coconut milk later. Super tasty and moist. AND PRIMAL! - 5/6/12
