This is a very easy dish to make. it is full of flavor without adding extra salt or fat. at less than 100 calories per serving it is a great way to indulge and still keep to a diet. Ingredients

1 lb. boneless, skinless chicken breast
3 cups fresh sliced mushrooms
1/2 cup chopped onion
2 cloves garlic chopped
2 cups fresh chopped tomatoes
3/4 cup red wine
1/4 cup water
1/4 tsp black pepper
Directions
1. preheat non stick skillet over med heat. cook chicken breads browning evenly, use low sodium chicken broth or water to keep from sticking. remove chicken from pan and set aside to cool.
2. Saute mushrooms, onions and garlic until tender.
3. Shred cooled chicken and add to mushroom mixture, add tomatoes, wine, water and pepper.
4. Cover and cook on low heat for 45 mins.
5. Uncover and cook on medium heat for 10-15 mins to thicken liquid.
6. Serve over Brown rice if desired. ( nutrition info does not include rice)
