Introduction

This was a rather easy recipe I "made". I have a 2 year old daughter and I always have to find ways to make sure she is getting food from every food group. I also have pre-diabetes and my mother has type 2 diabetes so we have to be careful with what we eat. This was a rather easy recipe I "made". Ingredients

    Dry Ingredients:
    1 1/5 cups Flour
    1/5 teaspoon Salt
    2 tablespoons Baking Powder
    1 tablespoon Splenda
    1 tablespoon Ground Cinnamon

    Wet Ingredients:
    1 1/3 cup 2% milk
    1 large egg
    1 tablespoon Canola Oil
    1 teaspoon Vanilla Extract
    2 Bananas (pureed)

Directions

1.) Whisk all dry ingredients in a medium size bowl.

2.) Whisk all wet ingredients in a separate medium size bowl.

3.) Add dry ingredient mixture to the wet ingredient mixture. Be sure to do this slowly so that it will blend together thoroughly.

4.) Pour half cup of batter into pan over a medium heat. Flip when there are a decent amount of "holes" (from air bubbles) in the side facing up. This lets you know that it has cooked at least half way through and it is ready to flip. The other side does not take long to cook.

Serving Size: Makes about 16 medium size Pancakes
