1/2 cup warm water (check yeast packaging for recommended temperature)
1 tsp sugar
2 1/4 tsp active dry yeast
1 cup warm milk (check yeast packaging for recommended temperature)
1/2 cup warm water (check yeast packaging for recommended temperature)
2 tbsp butter or margarine
2 tbsp sugar
2 tsp salt
5 cups flour (If you live in further North, all purpose flour will work just as well as bread flour, if you live further South, use bread flour: Southern all purpose flour has a different gluten content and will result in a heavier, denser bread. Google it for more details!)
Directions
Combine 1/2 cup warm water and 1 tsp sugar. Sprinkle in yeast. Let stand until foamy (about 10-15 mins) then stir.
In a large bowl, combine warm milk, 1/2 cup warm water, butter or margarine, 2 tbsp of sugar and salt.
Add yeast mixture.
Add 3 cups flour and mix well with a wooden spoon or stand mixer.
Add remaining flour gradually until a soft but not too sticky dough forms.
Knead on a floured surface for 10 minutes (or in a stand mixer for 5 minutes on low).
Round dough into a ball and place into an oiled bowl, turning to coat.
Cover bowl with plastic wrap and place in *unheated* oven with the light on (perfect rising temperature) for about 1 hour.
Punch dough down and divide in 2.
Smooth into loaf shapes and place into greased 8.5" x 4.5" loaf pans.
Cover loosely with plastic wrap or with a tea towel and place in unheated oven again with the light on for 30 minutes.
Remove pans from oven and leave on counter while you preheat the oven to 400ºF.
When oven is heated, bake loaves for 25-30 minutes. Remove from pans immediately and cool on wire racks.
