Ingredients

    6 slices wheat Bread
    6 Eggs
    6 Slices Ham
    2 Cups diced Tomatoes
    4 oz grated Mozzarella Cheese, part skim milk
    1 cup chopped Onions
    1 tbsp Olive Oil

Directions

Drizzle a large baking dish with olive oil. Saute the onions in the rest of the oil. Mix with diced tomatoes and seasoning of your choice. Lay bread slices in baking dish. Top with ham slices. Cover all with tomato/onion mixture. Break 6 eggs approximately over the bread/ham. Top with grated cheese and bake.
