Ingredients
2 Tbsp. vegetable oil
1 chopped onion
1 clove chopped garlic
1 Tbsp. curry
2 Tbsp. tomato paste
1 can(s) chickpeas
1/2 Tbsp. lemon juice
1 Tbsp. butter
1/2 tsp. salt
pepper
chili sauce
-
1/2 can(s) coconut milk
rice
Directions
Heat oil in a large (cast iron) skillet on medium-high.
Fry onions until slightly browned.
Reduce heat to medium.
Add garlic, curry, and tomato paste.
Stir and simmer for about 2 minutes.
Add chickpeas, reserved liquid, lemon juice, salt, and black pepper.
If using coconut milk, add to taste.
Simmer 5-6 minutes, stirring occasionally.
Add chili sauce or red pepper flakes, to taste.
Add butter or margarine, stirring through to melt it.
Stir and simmer for 5 minutes more or until chickpeas are softened and dish is hot.
Serve over rice.
