Ingredients

3/4 cup egg white, beat (or egg substitute)
1/2 cup unsweetened applesauce
1/2 cup fat-free margarine, melted
2 cups zucchini, shredded
2 ripe bananas, mashed
2 tablespoons Sweet-10 (sugar substitute)
2 tablespoons brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
2 teaspoons vanilla extract
2 cups whole wheat flour
1/2 cup old fashioned oats
Directions
1. Preheat oven 350 degrees.
2. In a bowl combine egg, brown sugar, sugar substitute, apple sauce, and margarine.
3. To bowl add baking powder, baking soda, cinnamon,nutmeg, salt, and vanilla.
4. Add old fashioned oats and then flour slowly.
5. Add zucchini.
6. Beat mixture (by hand or mixer).
7. Put into foil baking cups.
8. Bake 35 minutes or until toothpick comes out clean.
