Ingredients

    4 large eggs
    3/4 cup Cottage Cheese 1% Milkfat,
    Spinach, frozen, thawed and drained
    1/2 medium Vadalia onion, chopped
    2 tsp Walden Farms Chipolte Ranch Dressing
    2 wedges Laughing Cow Light Chipolte Cheese diced
    1 tbsp garlic powder
    dash of red pepper flakes
    1 medium tomato sliced
    1 tbsp grated parmesan cheese
    dried parsley
    cooking spray such as PAM

Directions

Preheat oven to 350 and spray a pie plate with PAM
Thaw and squeeze all liquids from spinach
whisk eggs
Reserve sliced tomato, dried parsly and parmesan cheese for topping
Mix with a fork all other ingredients
spread mixture in pie plate and top with tomato slices
sprinkle with shredded parm cheese and dried parsley
bake 15 - 20 minutes
