Ingredients

3 Cups all-purpose flour
2 Cups Splenda (ganulated, NOT sugar blend)
2 Teaspoons baking powder
1 Teaspoon baking soda
1/4 Teaspoon salt (pinch)
2 Sticks of unsalted butter (melted & cooled)
2 eggs
3/4 Cup of Almond Breeze unsweetened milk (or any low fat,
low carb, low sugar milk..like Hood's calorie countdown)
2 Teaspoons Vanilla Extract
1 Cup Mashed Ripe Bananas (2 bananas)
1 Cup Granola (low-fat, with/without raisins)
Directions
Preheat Oven to 350*. Whisk Flour, Sugar, Baking Powder, Baking Soda, and Salt into the bowl of an electric mixer fitted with paddle. In a small bowl combine Eggs, Milk, Vanilla, and Mashed Bananas.
Add the melted butter and blend (will be crumbly). Add Wet mixture to dry/butte mixture and mix until combined. Do Not Overmix.
Stir in Granola, and Walnuts. Using small cookie/muffin scoop drop a full scoop into each muffin tin (should make 48 perfectly).
Bake for 15-22 minutes turning half way through time. Check with toothpick, remove from pan and transfer to cooling rack.
Serving Size: makes 48 muffins (using mini muffin tin)
