Introduction

Ingredients

    1 cup onion, chopped
    1 teaspoon garlic, minced
    1 teaspoon olive oil
    1 cup dried lentils
    1 tablespoon chili powder
    2 teaspoons cumin
    1 teaspoon dried oregano
    2 1/2 cups chicken broth, preferably low sodium & fat free
    1 cup salsa
    6 low-carb tortillas (I use La Tortilla Factory Whole Wheat Tortillas)
    1 1/2 cups lettuce, shredded
    1 cup tomatoes, chopped
    6 tablespoons sour cream (use low fat for lower calories)
    1 cup cheddar cheese, shredded (use low fat for lower calories)

Directions

In a large nonstick skillet that has a lid, over medium-high heat, saute onion and garlic in oil until tender. Add lentils, chili powder, cumin and oregano; cook; stirring for 1 minute. Add broth and bring to a boil. Reduce heat to medium to medium-low. Cover and simmer for 25-30 minutes or until the lentils are tender. Uncover; and continue cooking for 6-8 minutes; until thickened. Mash lentils gently but no need to mash them thoroughly. Mix in salsa.
Spoon about 1/3 cup lentil mixture into each tortilla. Top with cheese, lettuce, tomato and sour cream. Fold in half & Enjoy!
