Number of Servings: 4

Ingredients

    1 bag fresh baby spinach, about 6 ounces
    ¼ cup Splenda
    ¼ cup apple cider vinegar
    ¼ teaspoon dry mustard
    ¼ teaspoon salt
    1 tablespoons EVOO
    ½ cup thinly sliced red onion
    1 small apple, sliced julienne
    Crumbled cooked bacon, for garnish, if desired (not included in Nutritional Info)


Directions

1. Wash spinach and let dry.
2. Whisk together Splenda, vinegar, mustard, salt, and EVOO.
3. Toss the apple and red onion with the dressing.
4. Refrigerate spinach/apple/onion and dressing separately until serving time.
5. Pour dressing over spinach just before serving and toss.
6. If desired, sprinkle with crumbled bacon.
