Introduction

A delicious twist on tuna with crunch! A delicious twist on tuna with crunch!
Number of Servings: 1

Ingredients

    1 4 oz. tuna fillet (marinade to follow)
    1 cob of grilled or roasted corn, cut off of cob after cooling
    1 bag Spring Greens pre-mixed salad
    1 carrot, shredded
    2 Tbsp. parmesan cheese
    2 Tbsp. Chianti Red Wine Vinaigrette

    Marinade for tuna:

    2 T olive oil
    1/2 lemon seeded
    1 tsp garlic, minced
    1tsp ground sea salt
    1tsp fresh ground black or white pepper


    Dredge fillet in olive oil then spread garlic on each side followed by salt, pepper and juice from lemon. Let marinade for 2-4 hours.

    Place greens in large bowl and top with corn, carrots, tuna and cheese.

    Dress with favorite low cal./low fat dressing. I'm using Chianti Red Wine Vinaigrette (Naturally Fresh brand)

Directions

Grill tuna on indoor/outdoor grill until flaky.
