Introduction

Ingredients

1 Chicken Breast - UNCOOKED - cut up into small chunks
2 Cups FRESH Broccoli - i just use the florets
1 Cup White Rice - UNCOOKED
1 Can of Cream of Mushroom Soup
1/2 Can of Milk
1 Cup Cheddar Cheese - save a smidge for the top
1 tsp Curry Powder
Directions
preheat the oven to 350*. in a large bowl, pour in the rice first, then the milk. now, mix in all the other ingredients, blending well.
transfer the mixture into a square baking dish, covering with foil. bake for 45 - 60 minutes depending on how things go.
after 45 minutes, check and see how the casserole is doing. if it is too dry, add a little water. (chicken stock could also be used). see how the rice and chicken are doing as well. continue cooking if need be.
for the last 5 minutes of cooking time, remove the foil covering and sprinkle the remaining smidge of cheese on top. bake uncovered for the rest of the time. ENJOY!!
