Introduction

Adapted from a Glycemic Index book (can't remember which one). Surprisingly light-tasting, despite the whole grains. Adapted from a Glycemic Index book (can't remember which one). Surprisingly light-tasting, despite the whole grains.
Number of Servings: 12

Ingredients

    3/4 C large-flake oats
    2 C buttermilk
    1 C whole wheat flour
    1/4 C ground flaxseed
    1 tbsp sugar
    1 tsp cinnamon
    1 tsp baking soda
    3/4 tsp baking powder
    1/4 tsp salt
    1 egg
    1/4 C egg whites
    2 tbsp oil
    1 tsp vanilla

Directions

Soak oats in buttermilk for 20 minutes. Mix together dry ingredients. Add remaining wet ingredients to oat/buttermilk mixture. Add dry ingredients to wet and stir. Use a 1/3 cup measure to scoop and spread pancakes. Delicious with fruit syrup.
