I had lots of pumpkin in the closet and I thought I'd use some up today. So, I put together this recipe. I had lots of pumpkin in the closet and I thought I'd use some up today. So, I put together this recipe.
Number of Servings: 6


    *Turkey - Turkey Sausage, Fresh, Cooked, 8 oz (remove)
    Apples, fresh, .5 large (3-1/4" dia) (approx 2 per lb (remove)
    Onions, raw, 1 cup, chopped (remove)
    Green Peppers (bell peppers), 0.5 cup, chopped (remove)
    Peppers, sweet, red, raw, sliced, 1 cup (remove)
    *chilli pepper or crushed pepper, 1 tsp (remove)
    Jalapeno Peppers, 1 pepper (remove)
    *Garden Time Organic Whole Wheat Pasta, 3 oz (remove)
    Pumpkin, canned, without salt, 1 cup (remove)
    Sage, ground, 2 tbsp (remove)
    Garlic, 2 cloves (remove)
    Pepper, black, 1 tbsp (remove)
    Pepper, black, 1 tbsp (remove)
    Fat free half and half, 1 cup (remove)
    Parmesan Cheese, grated, 2 tbsp (remove)
    Arugula, 1 cup (remove)
    Nutmeg, ground, 1 tbsp (remove)


Saute sausage, apple, onions, green peppers, sweet red ppepper, crushed red pepper, jalapeno pepper, garlic, all together until sausage is completely cooked and all vegetables are translucent. Add canned pumpkin,cooked pasta, half and half and spices. Cook for 10 minutes. Right before serving add 1 c. chopped arugula, stir in and then sprinkle with parmesan. Really, Really Tasty.
