Introduction

Ingredients

    1 pound extra lean ground beef
    2 garlic cloves
    2 Tbsp chili powder
    1 tsp ground cumin
    1 (28 oz can) diced Rotel tomatoes
    1 can red kidney beans, rinsed and drained
    1 sweet onion, chopped
    1 (46 fl. oz.) can of tamato juice from concentrate
    Season to taste

Directions

1. In a large nonstick skillet cook beef and garlic over medium heat, stirring with a wooden spoon to break up meat, until browned.
2. Drain meat and return to skillet.
3. Add chili powder and cumin; stir to combine.
4. Combine rotel tomatoes, beans, onions, and tomato juice in slow cooker.
5. Stir in beef mixture.
6. Cover and cook on high until the flavors are blended, 4-5 hours.
7. Add additional seasoning to taste.

Serving Size: Makes 12- 1 cup servings
