Ingredients

    Beef chuck, arm pot roast, 2.2 lb
    Onions, raw, 1 medium (2-1/2" dia)
    Potato, raw, 6 large (3" to 4-1/4" dia.)
    Baby Carots (14 carrots)
    Cauliflower, raw, 6 cup
    Cheez Whiz Light, 9 tbsp
    Milk, 2%, 2 fl oz
    Mushrooms, cooked, 8 cup pieces
    Margarine Country Crock, regular, 2 tbsp
    McCormick Savory Pot Roast Seasoning mix
    McCormick Brown Gravy mix
    Corn starch, 3 tbsp
    Salt & Pepper

    6 cups water

Directions

Peel & quarter potatoes
Coarsely chop onion
Add water, roast, onion, carots, seasoning mix, gravy mix and potatoes to large crockpot. Set on low heat and cook 10 hours or until tender. Season to tast. After roast is tender, thoroughly mix 3 tbsp corn starch in 1 cup cold water and pour into pot,. turn heat on crock pot to High. Stir until liquid thickens.
Cut Cauliflower into bite size floweret. Steam in steamer until tender.
Place Cheez Whiz and milk in small bowl, microwave for 30 seconds, (until melted), blend and drizzel over Cauliflower.
Place Mushrooms in microwave bowl with lid, add 2 tsp salt, 2 tsp pepper and spoone 4 tbsp margarine on top. Cover with lid and microwave for 2 - 2 1/2 minutes until tender and moist. Blend margarine, salt and pepper thoroughly. Serve as a side or over roast.


Serving Size: 1 4.4 oz pot roast/ 3/4 of a large potato/ 3/4 cup Cauliflower/ 1 cup mushrooms
