Ingredients

    2.25 C oat bran cereal
    .25 C brown sugar
    .25 C craisens
    .25 C Walnut pieces
    2 eggs
    .50 C lite coconut milk
    1 chopped apple ( or substitute pineapple tidbits)
    .75 C frozen apple juice concentrate
    2 T. coconut oil

Directions

Mix all ingredients and bake in a 425 degree oven exactly 17 minutes. Store in a zip lock bag in frig.
Makes a convenient and healthy breakfast. Can be gluten free if you use gluten free oats, ground into flour instead of the cereal.

Serving Size: Makes 12 muffins about 150 calories each
