Ingredients

1 lb flank steak
1/4 tsp of each : salt, pepper and grounded cumin
For the sauce:
1 garlic bulb (unpeeled)
1 tsp olive oil
1 c. Non-Fat Greek-Style Yogurt
1/2 c. fresh coriander (dried also works)
1/4 c. green onion, minced
1 tbsp dried chipotle
1 tsp paprika
1 tsp granulated sugar
1 tsp of each : lime zest and juice (or more, to taste)
1/4 tsp salt
Pinch of grounded cumin
Directions
For the sauce:
Cut the top of the unpeeled garlic bulb, drizzle with olive oil and wrap it in foil. Roast it in a 350° oven for about an hour or until garlic cloves are very tender and can be pressed out. Let cool in a bowl.
Incorporate the yogurt, coriander, onion, chipotle, paprika, sugar, zest and lime juice, salt and cumin. Mix well.
Sprinkle flank steak with grounded cumin, salt and pepper. Grill on the BBQ for 8-10 min (total) turning the meat once.
Transfer on a cutting board and cover with foil for 10 min. Cut and serve with the sauce.
