Introduction

This is quick, easy and full of fiber.But there is Sodium content. I washed the black beans off 2-3 times, so at least I think I'm getting less sodium. Ingredients

    3 Cups Cooked Elbow Macaroni
    1 Jar Salsa Con Queso Dip Medium
    1 Can Black Beans
    1 Can Ro-Tel Tomatoes with green chilies
    1 TBS Reduced Fat Sour Cream

Directions

Cook Elbow macaroni, 8-10 minutes. Cool. I put mine in the fridge for a day. Microwave con queso in microwave safe dish 1-3 minutes. Add to Cooled macaroni. Rinse Black Beans. Add to macaroni and cheese. Drain Ro-Tel tomatoes. Add to the mixture. Blend all together. If desired, garnish with Tortilla Chips and Sour Cream.

Serving Size: Makes 8 1 -cup servings.
