Introduction

I've adapted this recipe to be more Spark Friendly by using 95% lean ground beef. The applesauce adds moisture so you don't miss the fat. Using cinnamon and nutmeg gives a warm spicy flavor and the poultry seasoning adds a savory touch. They smell wonderful while cooking, too. Ingredients

    1/2 Cup uncooked Old-fashioned Oatmeal (Country Choice organic)
    1/2 Cup Applesauce, unsweetened gravenstein
    1 large egg
    4 TBsp. Ketchup - Trader Joe's Organic
    1-2 TBsp. minced onion, dehydrated
    1 tsp. poultry seasoning
    1 tsp. cinnamon
    1/4 tsp. nutmeg
    1/2 tsp. black pepper
    1/2 tsp. Nature's Seasons Blend (by Morton)
    16 oz. ground beef (95% lean)

Directions

In a large bowl combine first 10 ingredients. Mix well and let sit for a few minutes for the onion and oatmeal to soften. Add the ground beef and mix thoroughly.

Form into small meatballs (about 18) and place on foil-lined baking sheet.

Bake at 375 degrees for about 20 minutes. (I check them at 15 minutes to make sure they don't get overdone).

Serve with extra ketchup (not included in nutritional info) if desired. They are delicious served with baked squash or sweet potatoes and additional applesauce.
