Introduction
I wanted a summery side dish and I had an abundance of sweet peppers from my garden, so I took my fresh tomato and added some parm cheese and baked these bad boys up. They are so tasty, low calorie, low carbs and very good for you. A simple appetizer or side dish! Ingredients

4 Sweet Italian Peppers
1 medium tomato diced
1 Tbs. of Fresh Basil (about 3 leaves) - I used lemon basil
1/4 tsp of Olive Oil
3 Tbsp. of Parmesan Cheese
Salt & Pepper (optional)
Directions
Grill, spray grill grates with cooking spray,
Recipe:
In a small bowl dice tomatoes into tiny pieces, add basil and olive oil. Mix until combined and set aside.
Cut top of peppers off, cut a slit down the middle and de-seed pepper. Place on grill for about 3 minutes until slightly chard.
Take peppers off grill.
Once peppers are cool enough to touch.
Stuff with tomato Mixture and top with cheese.
Place back on grill for about 3 more minutes until cheese starts to melt.
This recipe would also be good with basil and mozzarella cheese.
Enjoy!!
You can either cook in the oven:
450 - 15 minutes
