This low fat version tastes better than the buttery drippy version and is better for you. Ingredients

    20 sheets Phyllo dough from freezer roll
    Olive Oil Pam or other Olive Oil Spray
    4 cups Fresh spinach - about 1 bag of Baby Spinach works well
    Fat Free Athenox or other Feta Block
    About ten Fresh mint leaves chopped - or dried mint

    Optional: Pine nuts or Walnuts finely chopped.

    Serve with: 1/2 Cup Low Fat Greek Yogurt

Directions

Using the Spray Olive Oil Pam, spray the bottom of a 8 x 12 in rectangular baking pan. Unroll the Phyllo and place two sheets in the pan. Spray the surface and add two more sheets, repeat 5 times.

Rinse and chop spinnach into a bowl. Add Feta and mint and for a little extra crunch even a few pine nuts. Mix all ingredients then spread onto the top layer of phyllo. Add one sheet, spray, then add two sheets for each spray five more times. Spray the top. Cut into diamonds before baking.

Bake at 375 for 25 minutes. Let cool a bit before serving. Two pieces spanokopita and a 1/2 cup side of Grrek yogurt with a tall glass of minted ice tea is a great summer meal.
