Introduction

Ingredients

1 1/2 Tbs Oil
5 cloves of garlic crushed
1/2 c water
2 bunches of spinach = 1 c cooked
2 1/2 tsp cumin
2 tsp garam masala
1 1/2 tsp salt
3/4 plain yoghurt ( I used soy yoghurt ..lactose intolerant)
1 1/2 onions finely chopped
3 1/2 tomatoes diced
6 oz firm tofu -drained and cubed
Directions
First squish the moisture out of the tofu!
Braise the onions and the garlic in a pot.
When onions are soft add cumin, garam masala and salt.
Mix well. add Tomatoes, spinach and water. Simmer for about 5 mins.
Next take off from the heat and blitz it all together. But be careful it's hot and it can splash!
Return to heat and add peas and yoghurt and stir well. Let it simmer on a low heat for 4-5 mins and then add the tofu. Continue to cook until tofu is warmed through and peas are soft.
Serve over rice and add some homemade paratha or naan.
* I usually add extra veggies like chopped mushrooms, brocolli etc not typically Indian I know but it gives it that extra boost of vitamins^^
