Ingredients

    4 oz of Smart Balance Macaroni Noodles
    2 Tbsp Light Buttery Spread
    2 Tbsp Flour
    1 cup 1% Milk
    2 wedges of Laughing Cow Cheese (any flavor will do!)
    2 oz. reduced fat cheddar cheese, shredded
    1 oz. Parmesan cheese, grated
    1 pinch of cayenne pepper (dependent on taste)
    .25 cups panko bread crumbs
    salt and pepper to taste

Tips

Try different kinds of Laughing cow cheese in this, such as jalepeno, blue cheese, or sundried tomato!

This dish can be eaten without baking if a creamier version is desired!


Directions

Boil Pasta for 2 minutes less than is on the box (so that the pasta is still firm.

Meanwhile, melt the spread in a sautee pan, add flour to make roux. Stir constantly until combined, then add milk. Wisk until lumps are gone, and a thickened sauce forms. Add salt, pepper, and cayenne (if desired). Reserve a little of the cheese for topping, and put the rest into the sauce. Stir until melted. Add the cooked pasta into the sauce, and stir until combined. Pour the mixture into a baking dish, and put top with bread crumbs and then remaining cheese. Bake in a 400 degree oven for 15 minutes
