Ingredients

    1 lb Fresh Crabmeat (I used canned)
    1 whisked egg
    1/2 cup scallions
    2 Tablespoons light mayo
    1 Tablespoon dijon mustard
    1/4 teaspoon salt
    1/2 teaspoon pepper
    2 tablespoons, bread crumbs
    2 tablespoons olive oil
    optional lemon wedges for serving

Directions

Mix ingredients (except olive oil)
Refrigerate until ready to cook

Use olive oil to cook, 5 minutes each side.

Serving Size: 8 Crabcakes (1 inch thick, 1/3 cup mixture)
