Ingredients

    1 box Mid East Couscous (Suggestions: Parmesan, Pine Nut, or Garlic & Herb)
    1 lb Shrimp, boiled and peeled
    1 bunch of asparagus, spears only (approximately 20)
    4 ears of corn, medium size, roasted
    8 oz. mushrooms, sauteed in one tsp of olive oil


Directions

Prepare Mid East Couscous per box directions
Boil and peel 1 lb shrimp
Roast 4 ears of corn; cut kernels from ear
Prepare asparagus in microwave (approx. 4 minutes)
Sautee 8 oz. mushrooms in 1 tsp olive oil

Mix all together and serve hot or cold

Serving Size: Makes 8 1-cup servings
