Introduction
This dessert combines the best of both worlds: fresh fruit and a yummy crispy crumble! Feel free to substitute any fruit you like to mix and match flavors. The calories can also be brought down slightly by using a "light" margarine and a sugar substitute such as Splenda (but the brown sugar adds only 15 calories per serving and has a great flavor!). Ingredients
-
1 medium Peach, pitted & sliced thin
1 1/2 cups Apple, peeled, seeded, & cubed
0.75 cup Oatmeal (non-instant)
2 Tbsp. Margarine or Butter, melted
2 Tbsp. Light Brown Sugar
1 Tsp. Cinnamon
2 Tsp. Lemon Juice
Directions
1.) Prepare fruit by peeling, seeding and cubing the apples, as well as pitting and thinly slicing the peach.
2.) Spray a shallow baking dish with non-stick cooking spray and arrange fruit in a single layer. Evenly distribute three tablespoons of water and the lemon juice over the fruit to prevent them from drying out while cooking.
3.) Prepare the crumble by combining the butter or margarine with the cinnamon and brown sugar until the sugar melts. Add the oats until well combined.
4.) Evenly distribute the crumble over the fruit in the baking dish.
5.) Cover loosely with foil to retain moisture and bake at 350 F for 20-25 minutes or until fruit is soft when poked with a fork and the crumble has browned slightly on its edges.
6.) Serve while warm and enjoy!
