Ingredients

*Aubergine, 250 gram
Peanuts, dry-roasted, 1 tbsp
*Coconut Shredded, 1 tbsp
*Sesame Seeds, 1 tbsp
*cumin powder, 1 tbsp
*coriander powder, 1 serving
*Tamarind Paste, 2 tsp (dissolved in 1 cup of water)
*Onion, chopped, 1 cup
*Corn Oil, 2 tbsp
oil to deep fry
chilli powder to taste
salt to taste
Directions
1. roast the sesame seeds with peanuts.
2. grind peanuts, sesame seeds and coconut into a fine paste (add water)
3. slit the aubergines from top without cutting the vegetable completely. deep fry the aubergines until they are cooked upto 70%. set aside.
4. take a frying pan, heat oil and add the chopped onions and stir until they are golden brown in color.
5. add the peanut paste and stir until it thickens.
6. add chilli powder, salt, coriander powder and garam masala.
7. add the tamarind water.
8. after 2 minutes add the aubgerines and cook for 10-15 minutes.
9. sprinkle some chopped parsley and serve hot with biriyani or breads.
