This is a favourite fridge-food for me. Number of Servings: 17

Ingredients

    1 x 540mL can of black beans, rinsed and drained
    1 x 540mL can of mixed beans, rinsed and drained
    1 x 450mL can of cut green beans, rinsed and drained
    2 x 180g can of tuna, drained
    1 medium red pepper, sliced
    half an english cucumber, sliced
    2 cloves of garlic, crushed and sliced
    handful of fresh mint, sliced chiffonade (little ribbons)

    Dressing:
    Juice of one whole lemon
    1 tbsp lime juice
    1 tbsp olive oil
    1 tbsp rice wine vinegar
    1 tsp ground cumin
    20 good grinds of pepper
    about a tsp of salt (or to taste)

Directions

Toss all ingredients listed together. For best results, stick in refridgerator for a few hours for flavours to blend together.

Serve and enjoy!

Serving Size: Recipie yeilds about 1500-1700 grams (about 8 cups, or so). Calories calculated per 100g serving (aproximately 1/2 cup)
