Introduction

The lemon gives this soup a little brightness that is nice in the summer. You could also add a leafy green (like kale or spinach), carrot and celery, and/or blend with an immersion blender to make a smooth soup. Do what makes you happy with what you have on hand! Ingredients

    1 cup lentils, picked through and rinsed
    1 potato, cubed
    1 box (4 cups) vegetable stock, unsalted
    2 cups water
    1 small onion
    2 Tbsp. garlic powder (or a couple cloves crushed garlic)
    1 lemon, juiced
    1 Tbsp thyme
    1 tsp Beau Monde
    2 Bay Leaves
    1 cup frozen peas

Directions

Put everything but the peas in a medium sized pot. Bring to a simmer, cover and let simmer for 30 minutes. Remove pot from heat, add frozen peas. At this time you can let cool to store for later, or remove the bay leaves and serve.
