Introduction

This is a quick and easy dish that everyone always loves! This is a quick and easy dish that everyone always loves!
Number of Servings: 12

Ingredients

    1 lb ground beef (extra lean, cooked)
    2 cans of Rotel (off brand can be substituted)
    2 cups of Fiesta blend cheese
    2 tsp of chili powder
    1 tsp of cumin
    1 tsp of crushed red pepper
    1 tsp of oregano
    1 tsp of minced garlic
    1 medium onion (I often use powdered onion as my daughter refuses to eat raw onion)

Directions

Preheat the oven to 400 degrees

Cook the ground beef completely, drain.

Add all of the spices and two cans of rotel, mixing thoroughly.

Place 6 corn tortillas on the bottom of an 8x10 pan.

Put half of the beef mixture over the tortillas, then top with one cup of cheese.

place the remaining tortillas on top of the cheese, then top with the remaining beef mixture and cheese.

Place in oven for 20 minutes or until cheese is bubbly.

There are many variations you can use for this recipe, ground turkey is a great sub for hamburger. I also sometimes will use flour tortillas. Other ingredients I may add are jalapenos, sour cream, mexi rice, refried beans, olives or enchilada sauce!
