Ingredients

    1 lb (or 2 10-oz packages) fresh spinach
    7-8 ounces of tofu (half block), cut into chunks
    3 cloves garlic
    2 Tblsp tamari soy sauce (gluten-free)
    1 tsp dill
    1/2 tsp (each) oregano, thyme, cayenee pepper, paprika
    handful fresh parsley
    handful fresh basil
    1 scallion, chopped
    Salt and pepper to taste

    Tools: Food processor

Directions

Steam spinach. Simmer soy sauce, garlic, dill, oregano, thyme, cayenne and paprika in a small saucepan for 4-5 min, stirring often. When spinach is finished steaming and soy sauce mixture is finished simmering, put spinach plus tofu, soy sauce mixture, parsley, basil, scallion into food processor and blend until creamy. Salt to taste.

Serving Size: Makes about 4 servings
