Ingredients

    CRUST:
    1/2 cup butter
    1-2 Tbsp white sugar, or 1 Tbsp powdered sugar
    1 cup flour
    Pinch of salt

    FILLING:
    3 egg yolks, beaten
    1 to 1-1/2 cups sugar
    2 Tbsp flour
    1/2 cup milk or cream
    2-1/2 cups diced rhubarb
    Pinch of salt (optional)

    MERINGUE:
    3 egg whites, beaten
    3-6 Tbsp sugar
    1/2 tsp vanilla (optional)

    NOTE: Double these ingredients for a 9x13 pan

Directions

Mix crust ingredients like pastry and pat into 8 or 9-inch square pan (or double ingredients for 9x13). Bake in 350 oven for 10-20 minutes.

Mix the filling ingredients, and either 1) cook on top of stove until thick, pour over baked crust and bake in 350 oven for 45 minutes until firm; or 2) pour uncooked filling over baked crust and bake in 325 oven for one (1) hour until firm.

Add sugar (and optional vanilla) to beaten egg whites, spread over dessert and return to oven until delicately browned.

NOTE: Double recipe for 9x13, this is excellent!
