Introduction

A slightly lighter version of fried potatoes, I love the mix of veggies. I serve this with Hillshire Farms Hardwood Smoked Chicken Sausage (not included in calorie count), for a meal that reminds me of my grandma's house... without the calories. Ingredients

    3 small potatoes
    1 small onion
    1 bell pepper, any color you have on hand
    5-6 stalks celery
    2 Tbs. olive oil


Directions

Chop all vegetables into chunks. Heat oil in large frying pan, and add vegetables, cook over medium heat about 15 minutes until potatoes are cooked through. Stir frequently.
