I started making this recipe during high school, cooking for my parents and brothers. I've modified it a bit and now make it for my husband. Its one of his favorites. Ingredients

3 cups egg noodles (measured dry- I used Ronzoni Smart Taste when calculating the recipe)
1 1/2 lbs of extra lean ground beef
1 cup skim milk
1 cup light sour cream (I used Daisy brand)
2 tsp dried parsley
2x 10.75 oz cans of Campbell's Cheddar Cheese soup
1 1/2 cups frozen peas and carrots
1/4 cup bread crumbs
Directions
Cook noodles in a large pot, following package instructions. When finished, drain.
While noodles are cooking, brown beef. Drain fat.
In a bowl or the pot used to cook the noodles, combine soup, milk, and sour cream.
Stir in peas/carrots and parsley.
Stir in noodles and beef.
Lightly coat a 9x13" casserole dish with cooking spray (not included in nutrition calculation)
Transfer the casserole contents into the casserole dish.
Sprinkle bread crumbs on top.
Bake at 375 for 35 to 40 minutes.
Serving Size: Serves 8
