This recipe is incredible! I have adjusted some of the ingredients from the original recipe to make it lower in fat and calories, but it doesn't take anything away from the taste! With some fat-free cream cheese spread over a piece -- it is a little piece of heaven! It also makes a great hostess gift during the holidays! This recipe is incredible! Ingredients

    3 oz canola oil
    3 oz unsweetened apple sauce
    1/2 cup egg beaters (equiv. of 2 eggs)
    1/2 cup sugar
    1/2 cup splenda
    1 cup whole wheat flour
    1/2 tsp salt
    1 tsp baking soda
    1 tsp cinnamon
    1/2 cup chopped walnuts
    1 cup grated carrots

Directions

Mix ingredients all together and pour into greased pan. Bake at 350 degrees for 1 hour. Makes on 8.5x4.5x2.5 inch loaf or 2 mini loaves.
