This is fabulous. From the kitchen of Clean Eating Magazine. Red lentils work the best but you could substitute green lentils. You can also add in other ingredients to suite your taste. Ingredients

    Red Lentils, 1 cup
    Olive Oil, 2 tbsp
    Onions, raw, 1 medium (2-1/2" dia) diced
    Red or Yellow Bell Pepper diced
    Ground Cumin seed, .25 tsp
    Pepper, red or cayenne, .25 tsp
    Brown Rice, medium grain, .25 cup
    99% Reduced Fat Chicken Broth, 3 cups + 1 cup water
    Salt, 1/2 tsp
    Lemon Juice, 1 TBSP

Directions

Rinse Lentils and pick through to discard any debris.
Heat oil in a large pot over medium heat. Add the onion and bell pepper and saute for 5 minutes or until translucent. Stir in spices. Add 3 cups of chicken both and 1 cup of water (or use 4 cups of water), lentils and rice. Bring to a boil. Reduce heat to low, cover and cook for 20 minutes. Add salt and cook for another 30 minutes on low. Before serving, stir in lemon juice.
