Introduction

This is a great low calorie dinner and so filling and good! This is a great low calorie dinner and so filling and good!

Ingredients

    4 Large Portabella Mushroom Caps
    2 cups fresh Spinach
    2 tbsp Coconut Oil
    2 ozs shredded mozzarella cheese
    1/2 pint grape tomatoes diced
    1/2 medium red onion diced
    1 tsp minced garlic
    1 tsp lime juice

Directions

1.Add coconut oil to frying pan, heat it medium high heat.
2. Break stems off portabella and put gill side down in pan.
3. Cook for 5 min
4. Flip mushrooms,.
5. Add spinach, put lid on pan. Cook for 5 min.
6. Mix diced tomatoes and onions in bowl with lime juice and garlic.
7. Put mushrooms and spinach on plate. Sprinkle shredded mozzerella cheese.
8. Top with Tomato and Onion mixture and serve.

Serving Size: 2 mushroom caps with 1 cup vegetable mix
