    1 cup Oats
    1/2 cup unsweetened applesauce
    1 cup 1% milk
    1 cup whole wheat flour
    1 tsp Baking Powder
    1/2 tsp Baking Soda
    2 egg whites
    1/4 cup dried apricots or cranberries


Makes 12 muffins

Put oats , milk, egg whites and applesauce in bowl and set aside.
In second bowl add whole wheat flour, Baking Powder, Baking soda, and Brown sugar and mix thoroughly,.
Add chopped dried apricots or dried cranberries to flour mixture.
Mix ingrediants of both bowls together just until combined nicely, do not over mix.

Spray PAM into muffin tins, and fill each one 2/3 full.

Bake ata 375 degrees for 20 - 25 minutes or until golden brown.

  • I want to make this, but in the directions it says to add brown sugar, but in the ingredients it has no brown sugar... So how much am I suppose to add? - 1/17/12
