    1 (15 ounce) can chickpeas, drained and rinsed
    3 oz pureed silken tofu
    Onions, raw, .25 cup, chopped
    Garlic, 2 clove
    Yellow Mustard, 4 tsp or 1 packet
    Celery, raw, 0.25 cup, diced
    salt and pepper, to taste
    4 Alvarado street fajita wraps

    Directions:

    1. In small bowl, mash chickpeas.

    2. silken tofu, celery, garlic, mustard, salt and pepper, and mix well.

    This is wonderful in a whole-wheat pita with sprouts and some chopped tomato!
