Introduction

Ingredients

2 onions, sliced thin
3 tblsp. olive oil, separated
2 tsp. minced garlic
1 lb. swiss chard, stemmed and chopped
1 lb. boneless skinless chicken breast, diced
1 can of cannelini beans, drained and rinsed
6 c. water or chicken stock
Salt & Pepper to taste
Directions
In a heavy pot, heat 2 tblsp. of the olive oil on medium high heat until the oil starts to ripple. Add the onions and stir until the onions have been coated in the oil, sprinkle with salt, and stir until the onions are well caramelized (may take up to 30 minutes)
In a smaller pan, heat the remaining olive oil and brown the chicken. Once the chicken is browned, add the garlic and cook until fragrant, then reserve to a bowl.
Once the onions are fully caramelized, add the beans, chard, and water. Bring to a boil, then add chicken and reduce to a simmer for 20 minutes. Season to taste and serve.
A suggestion - next time I make this I may add some carrots.
