Ingredients

    10 oz Sweet Potato
    2 cups Vegetable Broth
    1/2 Cup Milk or coconut milk.
    2-3 tsp Curry Powder

    Optional:
    1 cup Roasted Chestnuts.
    Plain yogurt
    Chives.

Directions

Steam Sweet potato until tender. (5-7 mins if frozen).
Add to Blender with 1 cup broth and milk, puree.
Add chest nuts, blend.
Add mixture and remaining ingredients to med sauce pan, bring to a boil.
turn down heat and simmer 15-mins.

Garnish with plain yogurt dollop and chopped fresh chives.

Serving Size: 2-3 1.5 cup servings
