Number of Servings: 6

Ingredients

    2 tablespoons Vegenaise
    2 teaspoons packed brown sugar
    1/2 teaspoon apple cider vinegar
    2 cups grated carrots
    1 medium apple, chopped
    1/4 cup walnuts, broken

Directions

In a salad bowl, mix together the vegenaise, brown sugar, and vinegar. Then stir in the carrots, apple and walnuts. Serving size is 1/2 cup. This recipe makes about 6 servings.
Variation: You can add raisins, but you will have to count the nutrition separately -- I didn't include them.
(My mom made this all the time -- except she never measured anything -- and of course she used mayo or miracle whip for the Vegenaise.)

    This is really good. I added raisins and left out the walnuts. I'm not a big fan of carrots, but this recipe made them taste yummy! - 6/5/08

    Was looking for a recipe that I had everything on hand for. I just had two bowls for lunch. And I dont even like raisins or carrots. But the combination of everything together just ... works. Yummy.Thank you. BTW.. how well does this keep in the fridge? A couple hours? - 6/28/10
