Introduction

Ingredients

    2 tablespoons of olive oil
    1 Onion finely chopped
    5 cloves of Garlic, crushed
    1 Red Bell Pepper, seeded and chopped
    2 medium Potatoes, peeled and diced
    2 fresh red Chili peppers, seeded and chopped
    14.5 oz can Hunts petite diced Tomatoes
    1-1/4 cup unsalted roasted peanuts.
    6-1/4 cup vegitable stock
    salt to taste
    black pepper to taste
    2 tablespoons of chopped fresh cilantro, for garnish.

Directions

1. Heat the oilin a large heavy pan over low heat. Stir in the onion and cook for 5 minutes. Add the garlic, pepper, potatoes, chillies and tomatoes. Stir well, cover and cook for 5 minutes.

2. Set 2 tablespoons of peanuts aside for garnish. Grind the remaining nuts in a food processor or blender. Add the vegetables and process until smooth. Return the mixture to the pan and stir in the stock. Boil, lower the heat and simmer for 10 min.

3.Pour the soup into heated bowls. Garnish with a generous scattering of cilantro and peanuts.

Cooks Tip: Replace the unsalted peanuts with peanut butter if you like. Use equal quantities of chunky and Smooth peanut butter for the ideal texture.
