Ingredients

3/4 cup wheat bran
3/4 cup nonfat milk
1 cup whole wheat flour
1/2 cup unbleached all-purpose flour
2 tsp cinnamon
3/4 tsp salt
1.5 tsp baking powder
1/4 tsp nutmeg
3/4 cup light brown sugar, unpacked
1/4 cup vegetable oil
1 egg
1 medium to large apple, peeled and chopped (I like Pink Ladies or Fuji, but it's up to you! chop them small enough for mini-muffins)
1/4 cup chopped fresh or frozen cranberries (if using frozen, thaw first please)
Directions
1. Combine the bran and milk, let sit for 5 minutes.
2. In a medium bowl, combine flour, baking powder, cinnamon, salt, baking soda, and nutmeg.
3. Stir the brown sugar, oil and egg into the bran mix. Stir the dry ingredients in until combined.
4. Stir in cranberries and apples.
5. Spoon into sprayed muffin tins, and top with just a few oats each.
6. Bake @ 400 degrees for about 10 minutes.
