Ingredients

    1/4 cup plus 2 T Flax meal
    1/4 cup coconut flour
    1/4 cup vanilla flavored whey protein powder
    1/4 cup unsweetened shredded coconut
    1/4 cup walnut pieces
    1 T cinnamon
    2 tsp baking powder
    1/2 cup Tempt Hemp Milk (unsweetened)
    3 eggs
    1 tsp vanilla extract
    Stevia sweetener (I might skip this next time - it had that funky sweetener taste. Maybe Splenda or Erythritol instead?)
    1/5 - 2 cups shredded zucchini

Directions

Heat oven to 350
Spray a loaf pan with no stick oil
Mix dry ingredients together in mixing bowl
In separate bowl, combine wet ingredients except zucchini
Add wet to dry and blend well
When blended, add in the zucchini
Pour into loaf pan
Bake about 40 min, until toothpick comes out clean.

Serving suggestion - smear with greek yogurt flavored with sweetener and cinnamon or maple extract as "frosting"

Serving Size: Makes 1 loaf, cut into 6 1 inch slices
