Introduction

Ingredients

    Ultra fresh eggs from the farmer's market downtown
    Whole milk from the Fresh Market
    Zucchini (or your choice of 0.5 cups of vegetables)
    Some onion for flavor
    Three giant slices of applewood smoked bacon
    Cheddar cheese for tartness (when you use good cheddar you don't need to add salt)
    And butter to keep the onions from burning

Directions

Cook the bacon in a cast iron skillet. While it's sizzling, crack five eggs into a bowl and whisk in the milk.

Remove the bacon from the pan and toss in the onions and enough butter to keep them from burning. The bacon fat should go a long way to helping this. Add the zucchini after the onions get going, which takes a minute or two. While this is going on, slice the bacon into munchable chunks.

Remove the veggies from the pan and mix with the bacon and cheddar.

Pour the egg mixture into the pan. Sprinkle with the bacon, vegetable, and cheddar mix.

Bake in the oven for 25 minutes or so at 325 degrees.

Should come out fluffy and moist, but firm enough to eat with a fork. Not runny.
