Ingredients

    1/2 lb Hot Italian Turkey Sausage (about 3 links) casings removed and crumbled
    1 small onion
    1 1/2 tsp canola oil
    1 garlic clove, minced
    2 c water
    1 can (15.5 oz) great northern beans, rinsed and drained
    1 can (14.5 oz) reduced sodium chicken broth
    3/4 c uncooked whole wheat macaroni
    1/4 tsp black pepper
    1 c fresh spinach, cut into strips
    5 tsp shredded parmesan cheese

Directions

In large saucepan, brown sausage, drain and set aside in a bowl. In the same pan, saute onion in oil. Add garlic and saute 1 minute longer.

Add water, beans, tomatoes, broth, macaroni and pepper. Bring to a boil. Cook for 10 minutes or until macaroni is tender.

Reduce Heat to low adn stir in sausage and spinach. Cook for 3 minutes or until spinach is wilted. Garnish with cheese.
