Ingredients

6 eggs
2oz mozzarella cheese
1 cup fresh spinach
2 slices bacon
4oz ground beef
1 oz feta cheese
.25 c coconut milk
Directions
Preheat oven to 350F
Cook bacon, flipping often
In medium bowl, combine eggs, feta, coconut milk, and spinach. Add salt/pepper to taste.
When bacon is done, transfer to paper towel to drain. Use bacon fat in pan to cook ground beef until no longer pink. When finished, add to egg mixture.
Grease a bread loaf pan, and pour mixture in. Lay your pieces of bacon on top, then sprinkle with your mozzarella.
Cook at 350F for appx 30 min, until egg is no longer runny
Serving Size: makes 3 2-slice servings (each slice appx 1" thick)
